I am new to Linux. What OS would be anyone recommend I start off to get my feet wet (not soaking thought!!)

Or Mint
By the way, both Ubuntu and Mint are the same OS, the different flavors are called distributions.
Ubuntu for sure...Very easy to manage, nice GUI.
