I recently added an HP deskjet printer to our Solaris network. I deleted the old printer which this one is replacing. I did everything in Printer Admin. I could think of.
The problem now is that when I go to print something out of Star Office, my new printer is not a valid choice from the drop down list (there are 4 other printers besides this one.) the old one is still listed.
Any advice would be great.
I have already pinged the IP addy and all..everything seems up to par. However, this is the first time I have ever added a new printer, so I may be missing something.

Its not clear from your post that you have a valid hpnp software installed.
If not try the following.
Install the hp jetadmin software. ( HPNP )
Run the jetadmin and configure the priter. This requires the printer's LAN hardware address, IP address etc. And add the printer to spooler.
Check the printer status using lpstat.

personaly i didnt use hp jetadmin. (i believe it is also discontinued from hp)
dont use admintool to add a remote printer. make sure you are useing lpadmin.
# lpstat -p hpqgait-01 -l
