For these two types of network adapter:
Intel(R) PRO/1000 MT Server Adapter
Intel(R) PRO/1000 MT Dual Port Network Adapter
How many IP addresses can be configured on it at the same time?
System is Windows 2000 Server.

It's not dependent on the NIC, but on how much the IP stack of the OS allows/can handle. One resource [ref] I found for that says

So if I asked to add 4 more IP addresses on 1 single network adapter(Intel(R) PRO/1000 MT Server Adapter), than it should be ok?[COLOR="\#738fbf"]

Since both are based on the same kernel (as far as I know), it's safe to assume that both share the same IP stack and it's limitations.
And 5 different IP addresses shouldn't be a problem for any modern server OS.
